Collin Gets His Permit


With five birthdays ranging from mid-October to mid-December it's no wonder that some of us choose to have birthday pie over birthday cake. Collin's choice? Derby pie. It's sort of like a big chocolate chip cookie in a crust. I baked it shortly before dinner, and it was still warm when we served it with Neapolitan ice cream.

On a side note, the leftover crust was made into two quiche for tomorrow night's supper. It'll be a busy day with an MRI for Verne, and this way we can come home and quickly heat the quiche in the oven, which is preferred to eating out for a second time in one day.


Back to the birthday boy. I remember the day he was born, although it was sixteen years ago, just like it was yesterday. Labor was easy, and the wonder of the Christmas season made birthing this tiny babe such an emotional experience for me. My mom had the two older children (then just two and three years old) at her home, and baked gingerbread men with them. Later that evening the children brought those gingerbread cookies to me in the hospital. As I recall, nothing ever tasted so good. I nibbled my Christmas cookies and nursed my new little boy, and felt very much at peace.

Collin and I went to the courthouse today, and on to the testing center where he passed the written test to receive his driver's permit, and then he drove me home. Though some things have changed, he's still my adorable boy, and his dimples still get to me today just like they did sixteen years ago.

that pie sounds great! What a handsome son you have. I'm sure you always think of your little baby when you eat gingerbread.

Happy Birthday to Collin! We often have pie instead of cake too. Yours sounds scrumptious!

I know exactly what you mean about being more emotional with a little baby at Christmas time. I burst into tears every time I hear A Baby Changes Everything, or Joseph's Lullaby.
Congrats on passing Collin, and good choice on birthday desserts, it reminded me that I have that recipe and should make one!

I haven't made quiche in sometime...I may need to put it on our menu! Yum!

My Colin picked a chocolate cake with white icing ... and blue and orange icing for that extra special touch! :D

Happy Birthday to Collin and congratulations on the learner's permit (always a big deal!). :o)

Loved your memories; my Brittany turned 15 on Monday, and the years certainly do speed by! Praying all is well with Verne as he continues to heal.
