You can eat the greens and the root. Chop the greens fine, and boil until tender. You can then saute them in a little olive oil and garlic. My favorite way to prepare the turnip is to peel it and slice it, drizzle some olive oil and salt it. Place in a 400 F oven for about 45 minutes. YUM!
Tracy, they're beautiful! We've never grown turnips. We do eat them - mostly roasted, as well. I have had them mashed (like potatoes); that's very good, too. Yours are so pretty; now I want to grow them next year.

I have never eaten a turnip! You make them sound delicious!
