i haven't been planning meals in a 'formal' way. rather, i've been keeping key ingredients at the ready, to put together a few things at {almost} a moment's notice. or something like that. wink.
i boiled some orzo then doused it with ice cold water to stop the cooking process. after draining it, i added lots of chopped tomatoes and garlic, black olives, fresh basil (mmm), and mediterranean feta. over that i drizzled olive oil and a bit of balsamic vinegar as well as fresh cracked black pepper and a pinch of red pepper flakes (to taste). one could add a bit of grilled chicken breast but the dish holds its own without the meat. :o)
Meal planning? something that I am not very fond of during the summer months...We have been eating lots and lots of Watermelon. I love it much more than it likes me... hugs

Well done, jAne! I have everything necessary for that dish, and that's my kind of cooking! I'll be making it sooner than later.
